At Conquest’s record-breaking tap takeover last Friday, the first releases in the brewery’s new series of fruited wild ales were released. But the beer won’t be draft-only for too long.
Friday saw the release of four new wild ales in a series Conquest has dubbed Bellator, which is “warrior” in Latin. Each variant comes from a kettle-soured base fermented with American ale yeast and then refermented with a different fruit.
The series will soon be making the jump from keg to bottle. At the event, Conquest’s Joseph Ackerman announced a variant of the beer refermented with fresh blackberries would soon be bottled. No word on a release date just yet.
The first four releases in the Bellator series were Amor et Accidia (mango); Manus et Stellas (pomegranate); Sancti et Dilecti (pineapple); and Vitam et Mortem (cherry).
